~GREAT GREAT GRANDMA'S CURRY~

~INGREDIENTS~
4 chicken breasts
a generous pinch of dried chili flakes
about 1 3/4" of fresh ginger, grated
1/2 tsp garam masala
1/2 tsp fenugreek
4 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
2 tbs white wine vinegar
5-6 cloves of garlic
two medium onions
two tins of chopped tomato and a generous squeeze of ketchup
basmati rice
~TO SERVE~
fresh coriander leaves
greek yoghurt
toasted almond flakes
banana and apple pieces
 
STEP 1.
fist sweat the onions in a large pan or wok. then add the chicken along with salt and pepper

STEP 2.
in a small bowl, mix together all the spices with the vinegar and ginger. you can add more vinegar to make a moist paste...
STEP 3.
add the paste to the frying onion and chicken mixture and stir it in thoroughly...

STEP 4.
add the tomato and ketchup. add water to make it more saucy and a chicken stock cube to season.
Leave the curry to brew for at least an hour (the more the merrier) at a very low temperature, allowing it to simmer.
STEP 5.
cook as much rice as you think you'll need (about 1/2 a cup per greedy portion) and serve along with any extras you desire.
